Ingredients (serving: 4 pancakes)

  • 1 cup semolina/rava/sooji
  • 1/2 cup curd
  • 1 cup green peas (fresh/frozen)
  • 1 small onion (finely chopped)
  • 1 tsp jeera
  • 2–3 green chillies (roughly chopped)
  • 4–5 garlic cloves
  • 1/2 tsp baking soda
  • 1/4 tsp each turmeric, red chilli & garam masala powder
  • Salt as per taste

Recipe

  1. Firstly, we will let sooji absorb water for a while. For this, take sooji, curd & add 1/2 cup water. Mix well & keep aside for 20–30 mins.
  2. Meanwhile, we will make paste out of peas. Heat a pan &add 1tbsp oil.
  3. Add jeera & let it fry for a few sec on low flame. Then, add green chillies & garlic cloves & let them fry for 3–4 sec.
  4. Add chopped onions & fry for 2–3 mins.
  5. Now, add peas to the pan & let the peas fry for 4–5 mins.
  6. Add turmeric, red chilli, garam masala powder & salt to the mixture & mix well. Cook for another 2 mins on low flame & then turn off the flame.
  7. Keep this aside & let it cool.
  8. Once cooled down, make a paste out of this (no need to add any water) & keep aside.
  9. Take the sooji mixture, add 1/2 cup water, salt and 1/2 tsp baking soda & mix well. We are ready to bake this now.
  10. Heat a tawa & spread 1 tsp oil. Take 1 ladelful batter & spread on the tawa.
  11. Now, take out a small ball from the green peas mixture & flatten it out like a cutlet/tikki.
  12. Place it on the batter on the tawa. Add tbsp of batter on top to cover it up.
  13. Cover the pancake with lid & let it cook for around 4 mins on low flame.
  14. Lift the lid & spread some oil on top & sides & then flip it. Cook for another 3 mins on low flame & your first semolina peas pancake is ready!

Tips

Make sure you keep the semolina, curd & water mixture for at least 15–20 mins to let semolina absorb curd & water.

Do not grind the paste for peas unless it is completely cooled down otherwise it might be inconvenient to make balls out of it later.

You can roast the pancake both sides until it reaches crispiness as desired.
