Saucy Pasta

Ingredients (serving — 2 people)

  • 2 cup pasta
  • 2 medium tomatoes
  • 1 medium finely chopped onion
  • 5–6 chopped french beans
  • 1 broccoli
  • 1 small capsicum finely chopped
  • 1/4 cup boiled corn
  • 250g boneless chicken breast (for chicken pasta)
  • 1 tbsp finely chopped garlic
  • 2 tbsp butter
  • 1 tbsp plain flour (maida)
  • 1 cup milk
  • 2 tsp red chilli flakes
  • 0.5 tbsp tomato ketchup
  • Few Basil leaves
  • 0.5 tsp mixed herbs
  • 0.5 tsp black pepper
  • 2–3 tbsp grated cheese (of your choice)

Recipe

  1. Boil your choice of pasta as per packet instructions (or — take water sufficient to dip pasta, 1 tsp oil and salt). Once boiled, strain water and keep pasta aside.
  2. Take tomatoes, remove the woody part. Add this to around 2 cups water and cook for 5–6 mins until their skins separate.
  3. Once boiled, remove the skin of tomatoes and roughly chop them. Make a puree out of it and keep it aside.
  4. Heat a small pan. Add butter and plain flour and cook for 5–10 seconds.
  5. Once colour changes a bit, add milk. Keep whisking and bring it to a boil and cook until it’s thick. Your white sauce is ready, keep it aside.
  6. Let’s assemble everything and prepare pasta. For this, heat a large pan, add butter, chopped garlic, red chilli flakes, onion, french beans, broccoli and stir fry for 3–4 mins.
  7. Add capsicum and stir fry for another minute.
  8. Add boiled corn and tomato puree to the mixture and cook for at least 7–8 minutes.
  9. Add tomato ketchup, basil leaves and mixed herbs.
  10. Add 1 cup water, the white sauce we made earlier and salt as per taste. Add the boiled pasta to the sauce and mix well.
  11. Finally, garnish with grated cheese of your choice.

Tips

For al dente pasta, cook until 90%.

For a spicier version, add chilli sauce along with tomato ketchup in step 9.

You can use vegetables of your choice in #6 and #7.

To make chicken pasta, prepare chicken separately: Heat a pan, add boneless chicken and dice it into cubes of desired size. Add salt, pepper, mixed herbs and chilli flakes and stir-fry till its cooked. Keep it aside and add this in #8.
