Curd Rice

Ingredients
(serving — 2 people)

  • 1 cup rice
  • 2 cups curd
  • 2 roughly chopped green chillies
  • 1 inch ginger
  • 1 tsp sugar
  • Coriander leaves
  • Salt to taste
  • 1/3 tsp mohri, jeera, urad dal and chana dal, 1 tsp ghee, 2 dried red chillies and few curry leaves (for tadka)

Recipe

  1. Wash rice and cook it in a cooker with 2.5 times water (2.5 cups here) and for 1 whistle. We need rice to be a bit more cooked for this.
  2. Let rice cool a bit. Meanwhile, make a rough paste of ginger and green chillies.
  3. Pour curd in a large mixing bowl, add the paste, salt, sugar and few chopped coriander leaves and mix well. Don’t let lumps remain in curd.
  4. Add rice to this mixture and mix well.
  5. Now, for tadka — heat a small pan, add ghee, mohri, jeera, urad dal, chana dal, red chillies, curry leaves and fry everything for a few secs.
  6. Take that tadka and put over your curd rice mixture and mix well.

Your curd rice is ready to be served, enjoy it with pickle of your choice!
