Curd Rice

Ingredients
(serving — 2 people)
- 1 cup rice
- 2 cups curd
- 2 roughly chopped green chillies
- 1 inch ginger
- 1 tsp sugar
- Coriander leaves
- Salt to taste
- 1/3 tsp mohri, jeera, urad dal and chana dal, 1 tsp ghee, 2 dried red chillies and few curry leaves (for tadka)
Recipe
- Wash rice and cook it in a cooker with 2.5 times water (2.5 cups here) and for 1 whistle. We need rice to be a bit more cooked for this.
- Let rice cool a bit. Meanwhile, make a rough paste of ginger and green chillies.
- Pour curd in a large mixing bowl, add the paste, salt, sugar and few chopped coriander leaves and mix well. Don’t let lumps remain in curd.
- Add rice to this mixture and mix well.
- Now, for tadka — heat a small pan, add ghee, mohri, jeera, urad dal, chana dal, red chillies, curry leaves and fry everything for a few secs.
- Take that tadka and put over your curd rice mixture and mix well.
Your curd rice is ready to be served, enjoy it with pickle of your choice!
