Chocolate Biscuit Walnut Cake

One of the easiest and fastest cakes anyone can bake at home and the first cake which I baked is this Chocolate Biscuit Walnut Cake. This would hardly take 10 minutes of prep time and you can make this next time you crave for cake with your tea or coffee. You can use any chocolate cream biscuits of your choice. Also, walnuts, if added (totally optional) enhance the taste of this cake.

Let’s have a look at the detailed recipe.

Ingredients

  • 2 packets of Bourbon Biscuit / Oreo chocolate biscuits
  • 1 packet Eno (5g)
  • 1 cup Milk
  • Few chopped walnuts (optional)

Recipe

  1. Take a cooker, pour around 3 cups water. Place a wire stand at bottom to elevate height. Ensure wire stand doesn’t float; adjust water accordingly if required. Let water come to boil which will take around 5–10 minutes. This will act as your pre heated oven!
  2. Grease your cake tin with oil, put butter/parchment paper at bottom, grease on top again with oil. Keep this aside.
  3. Meanwhile water boils in the cooker, blend bourbon biscuits in a mixer.
  4. Take the fine powder of biscuits, first put half cup milk and mix and then subsequently add the remaining milk and stir well.
  5. Add eno to the batter, and then stir in one direction. Batter would now become fluffy.
  6. Pour the batter onto the cake tin and tap the tin nicely to release air. * Add some walnuts on the top (totally optional)
  7. Now, place cake tin on wire stand in the cooker and close it. (Gasket and whistle of cooker needs to be removed before closing the cooker)
  8. Now, bake this on low flame for 25 minutes.
  9. After 25 minutes, switch off gas, remove the cake and let it cool down completely.
  10. Remove cake from tin once cooled and you are ready to enjoy this super easy chocolate walnut cake.

Tips

To use oven instead of cooker, preheat oven and then put the cake tin with batter and bake for 25 minutes at 180°C.

Put batter immediately to cook after using eno.

Adding walnuts and cashews in the batter or on top will give a nice taste to your cake in each bite.

Insert toothpick or knife before removing cake from oven/cooker to ensure cake is cooked properly. The toothpick/knife should come out clean.

Do not skip greasing the cake tin with oil or butter to ensure cake comes out smooth and easy once cooked.

To elevate height in cooker, wire stand or cookie cutters can be used. Ensure base of the cake doesn’t get direct heat otherwise the cake can burn at the bottom.
