Banana Walnut Muffins

use your overripe bananas to make these moist, soft banana muffins topped with walnuts

Ingredients (servings — 12)

  • 3 large bananas (mashed)
  • 1.5 cup all-purpose flour
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/3 cup melted butter / oil
  • 1/2 tsp salt
  • Chopped walnuts (optional)

Recipe

  1. Preheat oven at 180 degree celsius for 10 mins.
  2. Grease your muffin pans with butter/oil and keep aside.
  3. Take a large bowl and add mashed bananas, sugar, egg, melted butter and blend well.
  4. Now, sift flour, baking powder, baking soda and salt.
  5. Fold in the dry and wet ingredients and mix until smooth.
  6. Pour batter into each muffin pan filling up to 2/3rd in each pan.
  7. Sprinkle some chopped walnuts on each muffin (optional).
  8. Bake these for 20–25 mins.
  9. Let your muffins cool for a while before taking them out.

Tips

Make sure your bananas are ripe before using them. If not, preheat an oven at 180 degree celsius. Take a baking tray and place your bananas for 5 mins until they are black. These will make them mushy and ready to use.

You can also add chopped walnuts or choco chips and mix with the batter before you put them to bake.
